Once started, these bacteria are growing damn fast: my water and milk grains are thriving like crazy. Finally, my SCOBY is growing after 3 days! I will stick to the KOMBUCHA since it takes 7-8 days to ferment. Water Kefir and Milk Kefir only took 8-12 hours.

I bought a second SCOBY and I figured out what went wrong the first time: 70 g of sugar is A LOT of sugar and I only used 3 tablespoons of sugar the first time.
Fingers crossed for this second attempt!

My SCOBY did not do anything after 4 days and it died. My Képhir grains thrived like crazy! Képhir water is so easy to make and you get more probiotics in 2 days than Kombucha in 8 days! I will stick to Water Képhir however I will give it another try with Kombucha.

I attended my 2nd strike. It is much nicer this time with people from all over France coming to protest. I saw a mother with 2 little kids and the kids were happy with all the noise and they loved the stickers on their shirts. Many people came with their whole family like a natural thing to do.
It is time they joined their forces otherwise everything they’ve done is useless! I am glad to hear that the french left leader is ready to join the unions.

After 2 days of fermentation, I stored half of the Képhir water in a bottle with a cap for a second fermentation to increase the carbonation (more bubles) and I tasted the other half with ice. I immediately made a second batch of it. My Képhir grains have doubled in size.
Képhir water tastes like a lemonade but not quite, not sweet at all since the Képhir ate all the sugar, it is fuzzy and very refreshing. It has a unique smell and taste that lingers in your mouth. I understand why kids who are used to the taste will always look for it when they get older.
I drank 1 liter of Képhyr water right away!
